De keuken als laboratorium om te bouwen, plakken, stempelen en ontwerpen. Ooit gehoord van aardappelplastic? Tomaten-deodorant? Of fluiten op een wortel? Platform21 = Cooking and Constructing nodigde publiek uit om samen met verschillende ontwerpers, kunstenaars en architecten nieuwe toepassingen te ontdekken voor eetbare ingrediënten.

In de tijdelijke 'doe-het-zelf' kookstudio ontworpen door Frank Visser (IJM) kon iedereen zelf aan de slag aan de hand van instructables – stap voor stap handleidingen in beeld en woord. Elke zondag was er een Sunday Soup met workshops, lezingen, presentaties en films. Hier zie je wat we er tijdens Cooking and Constructing gecreëerd is, met publiek, met de ontwerpers die de expositieruimte gebruikten als studio om te werken en met de instructables waarmee je zelf weer aan de slag kunt. Platform21 = Cooking and Constructing maakte deel uit van het GNAM - gastronomia nell' arte moderna - festival. GNAM is een internationaal festival dat gastronomie, kunst en creativiteit verbindt. Het festival was eerder dit jaar ook in Parma (Italië) en gaat later dit jaar naar Cahors (Frankrijk). Picture the kitchen as a laboratory for building, gluing, stamping and designing. Ever heard of potato plastic? Tomato deodorant? Or using a carrot as a flute? Platform21 = Cooking and Constructing invited public to discover new uses for edible ingredients together with various designers, artists and architects.

This temporary do-it-yourself cooking studio designed by Frank Visser (IJM) was open to create with the help of instructables – step-by-step directions in words and pictures. With every Sunday a Sunday Soup, with workshops, lectures, presentations and films. Here you can see what we created together with the audience, with the designers who used the exhibition space as their studio and the instructables to use and go do it yourself! Na wat projecten gedaan te hebben waarbij hij glazuurtechnieken gebruikte, kwam Shane Waltener op het idee zoete tags en suikergraffiti op muren te zetten. Hij bewijst daarmee de communicatieve kracht van deze oude en traditionele handwerktechniek. Terwijl graffiti vaak wordt geassocieerd met vandalisme en anarchisme, krijgt het op deze manier juist een zoete en schattige uitstraling, wordt de boodschap positief en de muren driedimensionaal.

Je naam op de muur schrijven met suiker en snoepjes is iets heel anders dan dat te doen met een spuitbus. Voorafgaand aan de workshop in Platform21 ging Shane Waltener eerst het centrum van Amsterdam in met Amsterdamse graffiti kunstenaars IVES.one en KoolKoos om eetbare straatkunst te maken. Allebei de graffiti-jongens moesten eerst de glazuurtechniek onder de knie krijgen voordat ze aan de slag konden. Het bedekken en versieren van bestaande graffiti met bloemetjes en lieflijke kreten werd al gauw iets te zoet voor deze straatkunstenaars. Met een jointje in de mond en een kwast druipend met suiker kreeg hun graffiti al snel een wat anarchistischer karakter: een soort van zoet activisme. Iets wat de bezoekers van 'Cooking and Constructing' hen nadeden, zij lieten honderden eetbare tags en boodschappen achter op de muren van Platform21. Sweet Graffiti Shane Waltener uses icing sugar, egg white, lemon juice and candy to create somewhat cute graffiti.

Having done several projects involving icing and glazing, Shane Waltener got the idea to create sweet tags and sweet graffiti on walls. In this way proving the communicative power of such old traditional crafting techniques. Although often related to vandalism and anarchism, in this manner graffiti becomes sweet and cute, its messages positive giving walls a 3-dimensional character.

Writing your name directly on the wall with sugar and sweets is definitely something else than spraying it with paint. Before giving the workshop at Platform21 Waltener took to the center of Amsterdam together with Amsterdam graffiti artists IVES.one and KoolKoos to create some edible street art. Both of the guys used to spray cans and markers had to practice the icing techniques prior to taking it to the street. Starting of with covering existing graffiti tags with flowers and lovely messages, soon the sweetness of the sugar became just too much for these street artists. With a joint in their mouth and a brush dripping with sugar icing, their graffiti soon got a more anarchistic look: a sort of sweet activism. Something visitors of ’Cooking and Constructing’ copied by leaving hundreds of beautiful edible messages on the walls of Platform21. Voor het maken van tags en graffiti in alle vormen en maten heb je geen talent in het hanteren van spuitbussen meer nodig. Gebruik in plaats daarvan suiker, snoepjes en taartdecoratie technieken uit grootmoeders tijd om de stad te verfraaien. Ben je niet tevreden over jouw tag of die van iemand anders? Breek ‘m af, eet ‘m op en begin opnieuw... Maak je omgeving mooier met sweet graffiti, maar pas op voor gaatjes! Happy tagging...

Ingrediënten: - 200/250 gr poedersuiker - 1 theelepel citroensap - 1 eiwit - voedselkleurstof Gereedschap: - spuitzakken - schaar - bakpapier - potlood 1. Voeg voor het maken van het eiwitglazuur alle ingrediënten, behalve de voedselkleurstof samen en mix voor minstens 3 minuten. <a href="http://www.platform21.nl/id/3310"><img src="http://www.platform21.nl/image/324/3310-400-298.png" height="298" width="400" alt="stap 2" title="stap 2" /></a><a title="Vergroot afbeelding - stap 2 - Platform 21" href="/page/3310/nl">stap 2</a> 2. Teken het ontwerp van je tag op een stuk bakpapier. 3. Vul een spuitzak met eiwitglazuur. Vouw de uiteinden plat en vouw de hoeken naar binnen, zodat je een punt krijgt. Rol deze punt op, zodat het glazuur naar de onderkant van de spuitzak gedrukt wordt. Teken nu met het glazuur de omlijning van je ontwerp. Terwijl je werkt, raakt de spuitzak het papier en haal je de zak naar je toe. Onderbreek de lijnen zo min mogelijk. 5. Doe dit totdat je het hele ontwerp omlijnd hebt. 6. Maak nu het dunnere gekleurde glazuur waar je het ontwerp mee invult. Doe dit door kleine hoeveelheden water of kleurstof bij het eiwitglazuur te voegen. Check de dikte van het glazuur door met een mes door het oppervlak van het mengsel te snijden. Wanneer de kanten na 10 seconden weer samenkomen, heeft het glazuur de juiste dikte. Komen de kanten sneller samen, dan is het te dun en voeg je extra eiwitglazuur toe. Doe het gekleurde glazuur in een spuitzak en vul het ontwerp in door binnen de witte randen te blijven. Tags, throw ups and graffiti of all description don’t need the expert handling of spray cans anymore. Use sugar and sweets instead, and try grandma’s cake decorating technique to decorate the city. Not happy with your tag or anyone else’s? Break it off, eat it, and start again… Enrich your environment with sweet graffiti but watch those cavities in your teeth! Happy tagging…

With a pencil, draw the design of your tag on a piece of greaseproof paper. 3. Fill one piping bag with royal icing. Fold the top corners to the middle so you yet a point and roll this down, so the icing moves to the lower tip of the bag. Now start drawing the outline of your design with the royal icing. Make contact with the paper and pull the bag towards you, working in nice straight lines. 5. Repeat this until you outlined the whole design. 6. Now make the coloured (runnier) icing to fill your design with. Add small amounts of water or edible colouring to the royal icing. Check the consistency by cutting across the surface of the mix with a knife. You’ll have reached the right consistency if the fold comes together on the count of 10. If the fold comes together sooner, the mix is too thin and won’t set properly. Put the coloured icing in a piping bag and start filling in the shapes of your design, moving along the inside of the white shape without leaving any seams. This is called Flood work. Daniera ter Haar en Christoph Brach creëerden samen 100% SAP, een project over de kracht van natuurlijke kleur. Groenten worden getransformeerd in een natuurlijke inkt om een nieuw printproces te voeden. Dit proces laat de toeschouwer zien hoe de print op de poster langzaam groeit. Een 3D ingrediënt keert terug in een 2D icoon.

Voor Platform21 = Cooking and Constructing gebruikten Ter Haar en Brach de keukensetting van Platform21 als tijdelijke studio om hun experimenten met natuurlijke inkt door te zetten. Het werd een visueel onderzoek naar groente en hun krachtige kleuren, dat ze de naam RAW COLOR gaven. Een nieuw proces waarin de kleurintensiteit behouden wordt, vangt de geoogste kleur. Cyaan werd vervangen met inkt uit rode kool, geel door pompoen en magenta door bietjes. Ze begonnen met het printen van abstracte vormen als vierkanten en cirkels, maar al snel kwamen ze er achter dat de vormen niet dicht ingekleurd werden maar bestonden uit een serie strepen. Door de pulp te drogen in een oven blijft de natuurlijke kleur veel langer goed, net als de pulp zelf die anders snel verrot. Daniera ter Haar and Christoph Brach together created 100%SAP, a project about the power of natural color. Vegetables are transformed to a natural ink to feed a new printing process. This process enables the viewer to watch the poster’s print slightly grow. A 3-D ingredient returns as 2-D icon.

For Platform21 = Cooking and Constructing, Ter Haar and Brach used the kitchen unit setting of Platform21 as their temporary studio to continue their experiment with natural ink. It became a visual research about vegetables and their powerful colours, which they named RAW COLOR. Vegetables are dismantled and purified to their visual essence, their raw colour. A new process preserving their intensity on colour cards captures the harvested colour. Cyan is replaced by the ink from red cabbage, yellow by pumpkin and magenta by beetroot. They started with printing abstract forms like blocks and circles. By drying the pulp in an oven the natural colour and pulp itself last much longer. To cook is to turn over in the mind. To chew is to evaluate. To digest is to make your own.

Food for thought. On a metaphorical level, food-related verbs like cooking, chewing and digesting relate as much to the cerebral acts of thinking, evaluating and appropriating as they relate to the physical processes of food preparation and eating. It seems to indicate a clear instruction on how to make things your own. As a matter of fact the combination of doing and thinking represented in food language defines rather well the philosophy of Platform21 as a center for creativity, design and fashion. Its focus is on making creative processes more transparent and available to the public while at the same time inviting some of the most inspiring and innovative designers and artists to present their best work. As part of the GNAM festival, Platform21 = Cooking and Constructing started from the notion of the kitchen as a laboratory and production facility. Of all spaces in the home, the kitchen probably defines the essence of doing things yourself best. It is in the daily production of the family meal where creativity, culture and innovation all come together. Paradoxically, the kitchen is also growing into a symbol of the disappearance of traditional Do-It-Yourself values: Ready-meals and take-out-food increasingly replace the art and knowledge of home cooking. Projects like GNAM indicate an understanding of the cultural and creative heritage embedded in food culture but unfortunately there still exists a tendency to neglect the importance of being able to do things yourself. As an antidote to the disappearance of this important individual knowledge and to be a source of personal inspiration Cooking and Constructing was designed as a public kitchen for re-evaluating and rethinking the use of very basic edible ingredients. We invited designers, artists, architects and thinkers, as well as the general public to test and play with these ingredients and to come up with new or improved ways to use them. The results showed such unusual products as lemon-batteries, potato-plastic, graffiti made from eggs and sugar, as well as stimulating visions on the role of edibles in culture today and tomorrow. After intense weeks of food deconstruction what remained strongest was a sense of curiosity and wonder at the limitless possibilities these simple ingredients offered. Cooking is as much about meal preparation as it is about nurturing creativity. De tafel is een plek om elkaar te ontmoeten. Studenten van de TXT afdeling van de Rietveld Academie gebruikten grote tafelkleden om met elkaar te communiceren via experimentele aardappelstempels.

Fluitenbouwer Maarten Visser stelde een compleet groente-orkest samen. Deelnemers van zijn workshop maakten wortelfluiten en -trompetten, pompoenraspen en paprika en linzen samba's. Nadat iedereen het geluid van zijn of haar instrument had bestudeerd speelde het 'orkest' een compositie die Visser speciaal hiervoor maakte. Flute maker Maarten Visser composed a complete vegetable orchestra, guiding participants in making carrot flutes and trompets, pumpkin guiro's and paprika and lentil shakers. Visser made everyone study the sound of their instrument and the orchestra played his specially made composition. Tankstation voor auto en geest Het begon als een idee voor een kunstwerk voor de openbare ruimte dat de discussie over olie op gang moest brengen. Nu, drie jaar later, staat het New Energy tankstation van ontwerpers Jeroen Bisscheroux en Michiel Voet op het NDSM terrein in Amsterdam en tanken 90 mensen hier regelmatig koolzaadolie. Ook kun je hier mediteren én er is sprake van uitbreiding. <a href="http://www.platform21.nl/id/3748"><img src="http://www.platform21.nl/image/295/3748-400-300.jpg" height="300" width="400" alt="New Energy" title="New Energy" /></a><a title="Vergroot afbeelding - New Energy - Platform 21" href="/page/3748/nl">New Energy</a> Jeroen Bisscheroux: "Bij dit tankstation tank je aan de ene kant CO2-arme bio-olie of elektriciteit, aan de andere kant kun je jezelf opladen. In het ontwerp bevindt zich een zitplek waar je naar een soundscape kunt luisteren, over het IJ kunt staren of kunt bidden." Al 90 mensen zijn lid van de 'Club New Energy', waarbij je een betaalpasje krijgt om voor je volle tank te betalen. "Dat zijn echte idealisten, je moet er namelijk wel voor omrijden. De lokaal verkregen koolzaadolie is geschikt voor elke dieselauto. Bovendien wordt de wereld ook nog eens mooier van al de koolzaadvelden die een prachtige gele kleur hebben. Met twee oogsten per jaar zou men hier nog veel innovatiever in kunnen worden door braak liggende bouwgrond bijvoorbeeld voor één of twee oogsten te gebruiken." Binnenkort wordt de koolzaadolie tijdelijk ingeruild voor olie van de Jatropha boon, een boon die groeit op de allerdroogste gronden van Afrika. Bisscheroux: "Als wij in het Westen met z'n allen op die boon gaan rijden, zijn we hier in één klap van het brandstofprobleem af en zal er in Afrika geen hongersnood meer zijn. Wij gaan dat op hele kleine schaal met New Energy doen." Ze zitten zeker niet stil, Jeroen Bisscheroux en Michiel Voet. De gemeente Enschede wil een hele keten 'New Energy' stations openen en er wordt op dit moment hard gewerkt aan de 'New Energy Gas & Run' voor Rotterdam. Aan één kant tanken, terwijl je aan de andere kant een virtuele marathon rent: voor auto, geest én lichaam. EcoAestetics "Wat kunnen kunstenaars en ontwerpers door middel van innovatieve technieken en creatieve denkprocessen doen om energiebesparing te promoten? Kunnen kunstenaars anderen daadwerkelijk inspireren, via een bepaalde vorm of geluid, milieubewuster te zijn?" Deze vragen stelde Hicham Khalidi, directeur van <>TAG en curator van EcoAesthetics, zichzelf en verschillende kunstenaars. De resultaten zijn te zien in de tentoonstelling die 22 maart opende in het <> TAG in Den Haag. Met onder andere het werk van Michael Mandiberg, die 'Realcosts' ontwierp. Een Firefox plug-in die uitrekent hoeveel die vliegreis nu echt kost én hoeveel bomen je daarvoor zou moeten planten. Na veel experimenteren krijgt Leonenko echter al genoeg elektriciteit uit één citroen om een LED dagen achtereen te laten branden. Bezoekers keken met hem mee en maakten ook een citroenbatterij. Refuelling car and mind It all started with an idea for an art installation for the public space that would raise the discussion on oil. Now, three years on, more than 90 people regularly fill up their car with coleseed oil at the New Energy fuel station of designers Jeroen Bisscheroux and Michiel Voet, located on the NDSM site in Amsterdam. It doubles up as a spot for meditation and there is talk about expanding. <a href="http://www.platform21.nl/id/3748"><img src="http://www.platform21.nl/image/295/3748-400-300.jpg" height="300" width="400" alt="New Energy" title="New Energy" /></a><a title="Vergroot afbeelding - New Energy - Platform 21" href="/page/3748/nl">New Energy</a> Jeroen Bisscheroux: “On one side of this station you can fill up your car with bio fuel low on CO2 or charge your electric scooter, while on the other side you recharge yourself. A seating area is integrated in the design, where you can listen to a soundscape, gaze over the IJ canal or pray.” Already 90 people are members of the Club New Energy, which entails a pass in order to pay for your full tank. “Those people are real idealists, because it is quite a detour. The locally produced coleseed oil is fit for every diesel car. Furthermore the world literally becomes a brighter place because of the bright yellow colour of the rape fields. With two harvests a year, this could be an opportunity for innovation and for using fallow building grounds for one or two harvests until building starts.” Soon the coleseed oil will be temporarily replaced for the oil of the Jatropha bean, which grows on the driest grounds of Africa. Bisscheroux: “If we all switch to the bean oil in the West, it not only mean the end to our fuel problems, but it will end hunger in Africa at once. We are going to show that on a tiny scale with New Energy.” Jeroen Bisscheroux and Michiel Voet are not sitting around doing nothing, quite the opposite; they are in negotiation with the council of Enschede, which wants to open a whole chain of New Energy stations. Furthermore, developing the New Energy Gas & Run for the city of Rotterdam is taking up their time: refuelling the car on one side, while running a virtual marathon on the other – for car, mind and body. EcoAestetics “What are innovative artists and designers doing to promote conservation of resources using innovative technology and creative thinking? Can artists significantly inspire observers to be more environmentally sensitive by giving information a particular form or sound?” Hicham Khalidi, director of <>TAG and curator of EcoAesthetics, questioned himself and various artists. The results are shown in the exhibition that opened on 22 March in <>TAG in The Hague. With amongst others, the work of Michael Mandiberg, who designed ‘Realcosts’. When inserting two different metals into a lemon, electricity with a low voltage occurs. After much experimenting Leonenko succeeded in distracting so much voltage out of one lemon to make a LED burn for several days on end. Jan Jongert van 2012architecten gaf een lezing over hoe een nieuw type architectuur kan ontstaan als het integreren van landbouwgrond en stad uitgangspunt zou zijn voor stedelijke herstructurering of nieuwbouwprojecten. Wat voor effect heeft je eetgedrag op je omgeving? Jago van Bergen van Van Bergen Kolpa Architecten presenteerde de resultaten van het project Flow Food waarin bezoekers de rol van culinair planners vervullen.

Voedselketenstad Hoe kunnen we afval hergebruiken en hoe verbruiken we zo min mogelijk energie tijdens het recyclen? Een vraag waar ontwerpers zich sinds de jaren zestig van de vorige eeuw al mee bezig houden. Sindsdien zagen we onder andere het Heineken flesje dat leeg gebruikt kon worden als glazen bouwsteen en de PETfles die in noodsituaties eerst dient als drinkwater verpakking en daarna gevuld kan worden met zand en gestapeld tot noodwoning. <a href="http://www.platform21.nl/id/3732"><img src="http://www.platform21.nl/image/407/3732-400-339.jpg" height="339" width="400" alt="Heineken bouwsteen" title="Heineken bouwsteen" /></a><a title="Vergroot afbeelding - Heineken bouwsteen - Platform 21" href="/page/3732/nl">Heineken bouwsteen</a> 2012architecten pakt het rigoureuzer aan: wanneer zij beginnen aan een project wordt eerst groots onderzoek gedaan naar de ‘afvalstromen’ in een bepaald gebied. Van een aantal geselecteerde bedrijven in de omgeving wordt onderzocht wat zij aan afval produceren. Deze informatie wordt verzameld in ‘harvestmaps' en openbaar gemaakt op recyclicity.net, een website die ontwerper, sloper, bouwer en afvalscouts verbindt. Zo kan de recycle-cirkel zo veel mogelijk gesloten worden en worden er zo min mogelijk nieuwe bouwmaterialen gebruikt. Zo ontstond ook ‘Recycloop’, het paviljoen van 2012architecten voor het Festival aan de Werf in Utrecht, gebouwd uit stalen aanrechten. <a href="http://www.platform21.nl/id/3733"><img src="http://www.platform21.nl/image/650/3733-400-267.jpg" height="267" width="400" alt="Recycloop" title="Recycloop" /></a><a title="Vergroot afbeelding - Recycloop - Platform 21" href="/page/3733/nl">Recycloop</a> Deze benadering kan ook gebruikt worden binnen een voedselketen. “Een fundamentele voedselketen is een erg inefficiënt, open systeem,” vertelt Jan Jongert van 2012architecten, “wij proberen deze keten te optimaliseren door ‘m aan te sluiten op andere ketens en zo een grotere, gesloten keten te maken. Een voorbeeld is de Afrikaanse bierbrouwerij ZERI, die net zoveel andere activiteiten heeft aangewend tot het bijna geen afval meer creëert. Zo hebben ze nu onder andere een paddestoelenkwekerij.” Op deze manier ontstaan ook verschillende functies binnen de stad of industriële gebieden. “We onderzoeken hoe verschillende functies zo gecombineerd kunnen worden: wonen, werken, industrie en agricultuur. In het Rotterdamse havengebied is een functie gezocht voor de warmte die ontstaat tijdens het productieproces en verloren ging als ‘afval’. Zo is de Happy Shrimp Farm ontstaan,” aldus Jongert. <a href="http://www.platform21.nl/id/3734"><img src="http://www.platform21.nl/image/010/3734-400-300.png" height="300" width="400" alt="Harvest map" title="Harvest map" /></a><a title="Vergroot afbeelding - Harvest map - Platform 21" href="/page/3734/nl">Harvest map</a> Het opnemen van groen in de stad heeft veel voordelen: het verbetert de luchtkwaliteit, vermindert herrie, neemt water en hitte op. Het reinigt industriële gronden en dan is er nog het sociale aspect; lokaal voedsel produceren kan mensen verbinden. Jongert: “Toch komt het verbouwen van voedsel in steden nog niet zoveel voor. Wij doen dit in verschillende projecten, waar daken gebruikt worden om groente op te verbouwen en gebouwen een dubbelfunctie hebben als kas. Zo worden gebouwen self-sufficient en eten bewoners wat in en op hun huis groeit. Grappig detail: polymeren uit incontinentieverband vormen de perfecte potgrond voor deze daken.” Culinair plannen Het Nederlandse landschap: een landschap van boter, kaas en brood – onze landbouwgrond wordt gebruikt voor het verbouwen van graan en het telen van koeien. Of, wanneer je uit gaat van de etiketten op de verpakking van ons voedsel, produceren we in Nederland vooral koolhydraten en eiwitten. Dit gaat de komende decennia flink veranderen, aldus Jago van Bergen van Van Bergen Kolpa Architecten. Hij begon een aantal jaar geleden een onderzoek naar de toekomst van het Nederlandse landschap en kwam er al snel achter dat de balans tussen zout en zoet water hier een grote rol in zal spelen. Jago van Bergen: “Als je al het water op de hele wereld vergelijkt met een badkuip is de hoeveelheid zoet water gelijk aan één theelepel. Aangezien het westen van Nederland onder zeeniveau ligt en het steeds moeilijker zal worden om het water buiten te houden, zal zout water een belangrijke rol gaan spelen, ook in de samenstelling van ons menu.” <a href="http://www.platform21.nl/id/3735"><img src="http://www.platform21.nl/image/725/3735-400-200.jpg" height="200" width="400" alt="Future lamdscape with menu" title="Future lamdscape with menu" /></a><a title="Vergroot afbeelding - Future lamdscape with menu - Platform 21" href="/page/3735/nl">Future lamdscape with menu</a> In verschillende schema’s en illustraties laat Van Bergen zien dat Nederland langzaam kantelt en daardoor verzilt en vernat. Zo ontstaan er allerlei verschillende grondsoort en water samenstellingen die over de hele doorsnede van Nederland variëren en naargelang dit landschap varieert ook het voedsel dat verbouwt kan worden. Van Bergen begint met de Noordzee, goed voor verschillende algensoorten waaronder nori en aramé. Daarnaast zal volgens Van Bergen een heel nieuw lagunegebied ontstaan, zout en nat, waar het fijn leven is voor zeekraal, schaal- en schelpdieren. De duinen in Den Haag zijn droog en het grondwater is zoet, een perfecte omgeving voor zandprei, -wortel, -aardappel, rucola en konijn. In de polders ter hoogte van Rotterdam groeien paddestoelen, hopscheuten en veenbessen en leven herten en elanden in een natte, zoetwater omgeving. Apart is dat de polders van Nederland zout grondwater zullen hebben: door de gekantelde grond komt hier het kwel – zout water – weer omhoog. Zo kan natuurlijk gezout lamsvlees verbouwd worden, naast zeepostelein en slakken. Ter hoogte van Utrecht voorspelt Van Bergen rijstsawa’s op het natte en zoete land. Op de droge zoetwater Utrechtse heuvelrug groeien wilde aardbeien, bessen, druiven en tarwe, terwijl de natte en zoetwater Gelderse vallei thuis is voor koeien, schapen, zoetwatervis en paddestoelen. <a href="http://www.platform21.nl/id/3736"><img src="http://www.platform21.nl/image/612/3736-400-300.jpg" height="300" width="400" alt="Culinairy planning in Platform21" title="Culinairy planning in Platform21" /></a><a title="Vergroot afbeelding - Culinairy planning in Platform21 - Platform 21" href="/page/3736/nl">Culinairy planning in Platform21</a> Ontzettend veel mogelijkheden om ons kaas, boter en brood repertoire uit te breiden dus. Maar wat willen de Nederlanders zelf eigenlijk eten? Die vraag stelden we bezoekers van Platform21. Zij konden drie favoriete ingrediënten kiezen uit het assortiment aan groente, fruit en vlees dat het veranderde Nederlandse landschap in 2070 te bieden heeft. Na het uitzoeken van de ingredienten konden ze foto's van de bijbehorende landschappen in de caravan plakken. Zo ontstond een blik in de toekomst en hoe ons land er uit zal zien. Ons eetgedrag heeft nameliijk zo’n invloed dat wij bepalen waar landbouwgrond zich bevindt en hoe die er uit ziet, zo bepalen we zelf het landschap. Na zeven weken blijkt de wilde aardbei het meest populair, op de voet gevolgd door de groene asperge en zeekraal. Aan het eind van de presentatie was het tijd voor een foto in dit nieuwe landschap en een kleine proefimpressie van wat Nederland over 60 jaar op culinair agrarisch gebied te bieden heeft. Food chain city How can we re-use waste and how do we use the least energy when recycling? Questions designers have asked themselves since the 60s of last century. We have seen different solutions since, amongst others the Heineken beer bottle, which functions as glass building block when empty and the PET bottle, a water bottle that can be filled with sand and piled up into emergency housing. <a href="http://www.platform21.nl/id/3732"><img src="http://www.platform21.nl/image/407/3732-400-339.jpg" height="339" width="400" alt="Heineken bouwsteen" title="Heineken bouwsteen" /></a><a title="Vergroot afbeelding - Heineken bouwsteen - Platform 21" href="/page/3732/nl">Heineken bouwsteen</a> 2012architecten does things more rigorously: when they start a new project, they start off with an extensive research into flows of waste in a certain area. The production of waste of a selection of surrounding companies is researched. This information is collected in ‘harvest maps’ and made public on recyclicity.net, a website connecting designer, demolisher, builder and waste scouts. In this way the recycle circle can be closed as much as possible and new building materials are used as little as possible. This is also how ‘Recycloop’ came into being, the 2012architecten’s pavilion for the Festival aan de Werf in Utrecht, build entirely from steel sinks. <a href="http://www.platform21.nl/id/3733"><img src="http://www.platform21.nl/image/650/3733-400-267.jpg" height="267" width="400" alt="Recycloop" title="Recycloop" /></a><a title="Vergroot afbeelding - Recycloop - Platform 21" href="/page/3733/nl">Recycloop</a> This approach can also be used regarding food chains. “A basic food chain is a very inefficient open system,” Jan Jongert of 2012architecten says, “we try to optimize the food chain by connecting it to other chains and thus creating a bigger, but closed chain. African beer brewery ZERI is an example; they have integrated as many chains in order to minimize their waste production. They hardly produce any waste anymore and now also grow mushrooms, amongst other things.” In this way different functions come together in a city or an industrial area. “We research how various functions can be combined: living, working, industry and agriculture. In the harbour area of Rotterdam a new function was found for the warmth produced during processing, which was lost as waste. That is when the Happy Shrimp Farm opened,” Jongert explains. <a href="http://www.platform21.nl/id/3734"><img src="http://www.platform21.nl/image/010/3734-400-300.png" height="300" width="400" alt="Harvest map" title="Harvest map" /></a><a title="Vergroot afbeelding - Harvest map - Platform 21" href="/page/3734/nl">Harvest map</a> Integrating more green into a city has numerous advantages: it improves the quality of air, makes a city less noisy, takes up heat and absorbs water. Green cleanses industrial soil and it comes with an important social aspect: producing food locally can connect people. Jongert: “Though cultivation of food in cities is still quite rare. We do this in several projects, where roofs are used to grow vegetables and buildings also function as green houses. In this way buildings become self-sufficient and residents eat what is growing in and on their house. A funny detail: polymers from incontinency diapers form the perfect soil for these roofs.” Culinairy planning The Dutch landscape: a landscape of butter, cheese and bread - our farming land is taken up by cultivation of grain and breeding cows. According to the labels on our food, through which we approach it, what we produce in the Netherlands mainly are carbohydrates and protein. This will remarkably change, according to Jago van Bergen of Van Bergen Kolpa Architecten. A few years ago he started his research into the Dutch landscape of the future and quickly found out that the changing balance between salt and fresh water will play a big role. Jago van Bergen: “If you compare all the salt water in the world to a bath tub, then the amount of fresh water in the world is comparable to one teaspoon. Because the west of the Netherlands lays under sea level and it will get harder and harder to keep the water out, salt water will start playing an important role, also in the composition of our menu.” <a href="http://www.platform21.nl/id/3735"><img src="http://www.platform21.nl/image/725/3735-400-200.jpg" height="200" width="400" alt="Future lamdscape with menu" title="Future lamdscape with menu" /></a><a title="Vergroot afbeelding - Future lamdscape with menu - Platform 21" href="/page/3735/nl">Future lamdscape with menu</a> In various schemes and illustrations Van Bergen shows how the Netherlands will slowly flip (the west going downwards and the east up). This creates different soil and groundwater combinations, which vary across the Netherlands and enable different opportunities for cultivating food. Leading us through a crosscut of the Netherlands, Van Bergen starts with the North Sea, good for different sorts of algae like nori and aramé. Next to the sea, a whole new lagoon area will develop, salt and wet, where life is good for marsh samphire, crustacean and shellfish. The dunes in The Hague are dry and its groundwater fresh; perfect surroundings for sand leek, carrageen, sand potatoes, rocket and rabbit. In the polders and creeks of Rotterdam fungi, hop and cranberries grow and deer and moose live in wet, freshwater surroundings. A remarkable fact is that brackish polders will have salt groundwater: because of the flipped land this is where the salt seepage water rises. Therefore naturally salted lambs meat is an option, as well as sea purslane and snails. Van Bergen predicts rice fields around Utrecht and wild strawberries, berries, grapes and oats on the dry and fresh watered Utrechte Heuvelrug (hillside). But what do the Dutch actually want to eat? We asked that question to visitors of Platform21. They could pick their three favourite ingredients from an assortment of the vegetables, fruit and meat the Dutch landscape of 2070 has to offer. After picking the ingredients, they could stick photos of the accompanying farming sites in a caravan. In this way we gained a glance of what our country will look like in the future. With our choice of what to eat, we determine how and where food will be cultivated in the Netherlands and how the landscape will look. After seven weeks the wild strawberry proofs most popular, closely followed by green asparagus and marsh samphire. At the end of the presentation there was the opportunity to have your picture taken in this new landscape and give the taste buds an impression of what the Netherlands agri-culinairy will have to offer.
